This is the easiest blueberry muffin recipe ever!
You can use fresh or frozen blueberries in this recipe. However, I use the fresh and juicy blueberries in season. I always buy them from the green-grocer as they have the best, handpicked fresh ones, unlike in supermarkets.
I can vouch that this recipe will never let you down. It is the easiest and most uncomplicated blueberry muffin recipe. So, whip these beauties and bring lots of smiles and joy to your breakfast table.
Ingredients needed:
Plain flour 150g
Sugar 85g
Veg. oil 1/2 cup
Blueberries 1 cup (fresh or frozen)
Eggs 1
Yoghurt 3tbsp
Milk 1/4 cup + 2tbsp lemon juice
Vanilla 1tsp
Baking P. 1tsp
Salt 1/4tsp
Let's make:
Set the oven to 180C
- Beat these wet ingredients together:
Egg, sugar, oil, milk, lemon juice, vanilla and yoghurts
- Mix dry ingredients together: add salt and baking powder to flour
- Now, mix the flour mixture into the wet batter and thoroughly mix everything together until a runny batter is achieved
- Tip the blueberries and mix lightly
- Grease the muffin cases, place them in a muffin tray, pour the batter in, leaving some space for them to rise
- Drop a few blueberries on top and sprinkle a little sugar on top
- Bake for 20-30mins or a skewer comes clean when stabbed in the middle.
- Your beautiful blueberry muffins are ready for the breakfast table

If you do not have muffin cases, prepare baking sheets cut into squares as follows:
Place baking sheets cut into squares and push down. Brush butter on them and your instant muffin cases are ready!
