Carrot soup - Deliciously creamy and healthy
Whatever the weather, you will love the smooth and silky taste of this soup. Its milky taste with a hint of the natural sweetness of carrots will make you let out a satisfied sigh just after a few spoonfuls.
The best news is that this soup will make you feel full to the brim and you will not raid the fridge in the middle of the night. therefore, it indeed helps to shrink the extra ounces around your midriff.
Make a larger quantity and store the extra potion in the fridge for the next day. And, believe me, the next day it tastes better!
So, let's make it!
Ingredients needed:
Carrots -500g
Onions -2
Garlic cloves -5
A piece of ginger
Salt to taste
Pepper powder -1/4tsp
Water
Fresh milk - 1/2 glass
How to make:
- Heat oil in a heavy bottom tall pan and drop chopped onions, a piece of ginger, and garlic
- Fry until onions are soft. Do not brown them
- Add sliced carrots
- Mix all and stir fry for a few minutes
- Pour water just above the carrots, cover, and boil until the carrots are tender. This will take about 20 - 30 mins
- Pour into a blender and whiz until smooth
- Tip all back into the same pan
- Add salt and pepper powder to taste
- Pour a glass of hot water and 1/2 glass of fresh milk in
- Simmer gently, under a low flame while stirring for 5mins
- Finally, add some chopped coriander leaves. This will contribute a distinct taste and flavour to this soup
- Done!
- Your delicious carrot soup is ready to devour now. Serve hot with croutons or a buttered toast
