Potato soup is a classic beloved for its simplicity and satisfying flavours.  Do not be surprised that this rich and nourishing soup needs only two ingredients to make: Tender potatoes and onions. And how easy is that!

If you are on the path of losing weight, this is the ideal soup to have once a week which will keep you full for a longer time.  Also, you do not need any accompaniment such as bread, breadsticks, croutons etc to go with it.

There is no need to list down the ingredients and their quantities here as there is no rigid way to make this soup. Just go through the simple way of making it as mentioned below and set to work;

You will need:

  • Tender potatoes 
  • Onions
  • Salt and pepper powder
  • Water

Let's make it:

  • Boil the potatoes until tender - I take about 200g of small potatoes. You can adjust this quantity according to the number of servings you need.  Peel the skin off and keep aside
  • Chop a large onion or two medium onions and saute in a little olive oil. Any cooking oil would do
  • Now drop the potatoes into the pan
  • Give a good stir for a few minutes until potatoes are well coated with the juices of the onion
  • Pour hot water until the potatoes are covered
  • Cover and simmer for 15mins
  • Now tip the whole lot into a blender and whiz until smooth
  • Pour back into the pot.  Add more hot water
  • Season with salt and pepper
  • Simmer for another 15/20mins and finally toss some thinly chopped spring onions
  • Done!
  • Enjoy the silky warmth of this simple potato soup
