Best Kale Recipe - Kale stir-fried - Healthy, delicious and addictive

                     The latest superfood, Kale is rich in vitamins   C and K, iron and also contains vital antioxidants which help in detoxing our system. The challenge is how to make these curly, rough, and dark green leaves appealing to our tastebuds.  Kale cannot be added to salads because they have a quite thick and hard texture which will not be easily digested.  But, once cooked through they become soft and wilted and even ooze out some natural oiliness. I found out that when adding a handful of desiccated coconuts, stir-fried Kale tastes quite delicious and rather addictive.   You can eat the whole lot with steamed hot rice or just on its own.   This Kale recipe is a real joy to try out and you can add the ingredients as you go.  Hence, I did not mention the exact amounts of ingredients needed.    You'll need these few ingredients; Kale leaves 1 large onion A few garlic cloves A couple of dried red chillies A handful of desiccated coconuts - available in supermarkets Salt 1

Paneer Butter Masala - Deliciously silky gravy and cushiony soft paneer cubes

These cushiony paneer cubes in a pool of delicious, silky gravy is indeed a warm, comforting, and delicious vegetarian dish, that originated in the Indian subcontinent. With hot steamed white rice or with rotis, you can scoop all up; smooth paneer cubes along with creamy gravy, and tuck them all in at once!  Delicious! Paneer is Indian-style cottage cheese and butter panner masala is a creamy curry-style dish made of paneer cubes, tomatoes, spices, onions, garlic, and double cream.  This popular dish is served at any Indian restaurant but I can vouch, that the homemade version is much more delicious and healthy too.  I deliberately avoided using cashews in my recipe because many are allergic to them and partly because of my intention to keep the calorie level low so that this could be a regular dish at home.
