Make sure you get the right ingredients from the best brands available for a perfect cake. Cheap brands from supermarkets can never give you the expected results.

Ingredients for a 1kg cake:

250g Self - raising flour

250g Margarine spread

250g Caster sugar

6 Eggs

1/8 cup Milk

1tsp Lemon juice

1tsp Vanilla essence

3 pinches of Salt

1tsp Baking powder

(If you need to bake a larger cake get 300g from each; flour, margarine and sugar.  7 eggs, 1/4cup of milk, 1 1/2tsp of baking powder, lemon juice and salt)

Tray size

Usually, a 9"x 9"(inches) tray is the perfect size for this cake.  However, if you prefer to slice the cake into tall, very elegant pieces you can easily divide any tray with a folded cardboard to achieve 9"x 8" (inches) size.


Now that you have gathered all the necessary ingredients and equipment, let’s make it: 

Set the oven to 160C

Step 1 - Cream margarine

  • Cream margarine and sugar together until pale white,  using an electric hand mixer.  Go clockwise  (3 mins)
  • Add eggs, one at a time. Make sure you beat 3 rounds after each addition
  • Add vanilla essence,  lemon juice, salt, and finally, cream all together for 2-3 mins
  • Mix baking powder into flour and sift onto the cake batter, holding the sieve well above it, allowing the air to escape
  • Fold the flour gently with a wooden spoon until everything turns into a creamy batter. Do not use the electric mixer at this point
  • Finally, add milk and mix well with a spatula/wooden spoon until a smooth batter is formed.  Then, with the electric beater, beat just for 30 seconds for everything to incorporate and achieve a very smooth batter.
Your batter is ready to go to the oven!


Step 2 - Into the tray

  • Line up a baking tray with parchment paper. Spoon the batter into the baking tray and flatten with a spatula. 
  • Lift up the tray and drop it twice onto your kitchen top gently, allowing the batter to spread and settle evenly on the try

Step3 - Into the oven

  • Place the tray on the lowest shelf of the oven
  • Bake for 20-25mins or the top turns golden yellow (Never open the oven door in the initial 10 mins)

Step4 - Take the cake out of the oven

Time for a peek!

  • After 20 mins, insert a skewer in the middle of the cake and if it comes clean,  your cake is ready! Or just push the middle of the cake with a finger and if it springs back the cake is done!
  • Take it out from the oven and let it rest for 5 mins
  • Slowly remove it from the tray and place it on a cooling rack
  • Peel off the parchment paper gently and let the cake cool off completely!

Time to serve your cake!

  • Dip a knife in hot water, wipe clean, and cut the cake into dainty squares.  Wipe the knife after slicing the cake each time
  • Enjoy your beautiful sponge cake with a cup of sweet milky tea!
  • The leftovers must be stored in an air-tight container and heated up 5- 8seconds in the microwave before serving. It will taste and feel so fresh, creamy and fluffy as if the cake was baked and came straight from the oven!
