Spread joy and warmth around, during any festive season with this beautiful dessert!
The perfect combination of the richness of dates and the sticky sweetness of the toffee sauce make this dessert rich, moist, and totally irresistible!
Make this on the previous day, allowing all the flavours and juices to infuse properly. Serve the daintily-cut, triangle cake pieces in a pool of toffee caramel sauce.
Ingredients needed:
Note: Opt for good quality soft and wet dates as dry Tunisian type of dates are not suitable for this recipe.
250g (1cup) Dates - destoned
150g (1cup) Self Raising flour
150g (1cup) Brown sugar
2 Eggs
65g (1/4cup) Margarine
1tsp Bicarb powder
1cup Water
3 pinches Salt
1/4tsp Lemon juice
1/4tsp vanilla For the caramel sauce 3tbsp Brown sugar 3tbsp Butter 3tbsp Double/Heavy cream 1pinch Salt | |
Let’s make it;
- Drop the dates and sugar into a heavy bottom pan. Cut the dates into small pieces if they are hard
- Pour water and boil for up to 5mins. Immediately add bicarbonate powder. Boil 10mins
- Next, add margarine and give a good mix. Turn the flame off and leave the pan to cool off a bit before adding the eggs
- Beat the 2 eggs with a fork or the balloon mixer and add
- Tip the flour little by little while mixing
- Now, add lemon juice, salt, vanilla and mix with a spatula until everything combines properly
- Pour the batter onto a round cake tray (line up the tray with parchment paper or rub butter and dust with flour
- Bake in the lower rack of the oven for 25 mins under 180C degrees
- After 20 mins stab a skewer and if it comes clean the cake is done. If not, keep it in the oven for a little longer
- Keep it to cool off in the tray and take it out gently
- Now stab the cake with a skewer in several places
- Leave aside to cool off completely
How to make toffee caramel sauce
3tbsp Butter
3tbsp Double/Heavy cream
1pinch Salt
- Drop all the ingredients into a small pan
- Boil
- Then simmer gently for a few minutes until the liquid turns out to be a slightly thick runny sauce
- Your sauce is ready!
- Slice the cake into triangle shapes
- Place a triangle piece on a serving plate
- Pour sauce over and serve it in a pool of sauce and a scoop of vanilla ice cream on top
- Yum Yum!
Boil all the ingredients together for 4-5mins
Simmer a minute or two until a silky sauce is formed
